Apple Cake

Ingredients

For 10 portions

Method

  1. Heat the oven to 180°C (160°C fan). Grease a 23 cm springform tin and line the base with baking paper.
  2. Peel and core the apples. Cut them into quarters and slice each quarter thinly, keeping the slices together. Toss gently with the lemon juice.
  3. Beat the soft butter with 150 g of the sugar for 3 to 4 minutes, until pale and fluffy.
  4. Beat in the eggs one at a time, then the vanilla.
  5. Mix the flour, baking powder and salt, and fold into the butter mixture with the milk until just combined.
  6. Spread the batter in the tin. Fan the apple quarters over the top, pressing them in lightly.
  7. Mix the rest of the sugar with the cinnamon and sprinkle it over the apples.
  8. Bake for 50 to 60 minutes, until golden and a skewer comes out clean from the cake. Cover loosely with foil if the top browns too quickly.
  9. Cool in the tin for 15 minutes before removing the sides. Serve warm or cold.
