Ingredients
For 4 portions
- 250g noodles (dry)
- 300g chicken breast (raw, boneless)
- 100g mushrooms
- 1 medium carrots
- 3 medium spring onions
- 2 cloves garlic
- 3 Tbsp soy sauce
- 2 Tbsp oyster sauce
- 1 Tsp sesame oil
- 2 Tbsp peanut oil
- 1 Tbsp fresh coriander
Method
- Cook the noodles according to the packet, drain and rinse under cold water to stop them sticking. Toss with a drop of sesame oil if you like.
- Slice the chicken into thin strips. Slice the mushrooms, julienne the carrot and slice the spring onions.
- Heat the peanut oil in a large wok or frying pan over high heat. Stir-fry the chicken for 3–4 minutes until just cooked through and lightly coloured. Add the minced garlic and cook for 20 seconds.
- Add the mushrooms and carrot and stir-fry for 2 minutes until the mushrooms soften and the carrot is still crisp.
- Tip in the noodles, soy sauce, oyster sauce and sesame oil. Toss everything together over high heat for 1–2 minutes so the noodles are hot and coated.
- Add most of the spring onions and toss for another 30 seconds. Serve immediately with the remaining spring onions and a scatter of fresh coriander.
