Chicken satay

Ingredients

For 4 portions

Method

  1. Cut the chicken into long strips. Mix with the soy sauce, curry powder, honey and peanut oil. Marinate for at least 20–30 minutes.
  2. Thread the chicken onto skewers (soak wooden ones first if using). Grill or pan-fry over medium-high heat for 8–10 minutes, turning regularly, until cooked through and lightly charred.
  3. For the satay sauce: gently warm the peanut butter with the coconut milk, lime juice and sweet chilli sauce in a small pan, stirring until smooth and pourable. Add a splash of water if it is too thick. Taste and adjust.
  4. Serve the skewers hot with the warm peanut sauce for dipping.
