Panna cotta

Ingredients

For 4 portions

Method

  1. Put 3 Tbsp of the milk in a small bowl, sprinkle the gelatine over the top and leave to bloom for 5 minutes.
  2. Gently warm the remaining milk, the cream, sugar and vanilla extract in a saucepan over medium-low heat until the sugar has dissolved and the mixture is steaming (do not boil).
  3. Remove from the heat and stir in the bloomed gelatine until completely dissolved. Strain the mixture through a fine sieve if any lumps remain.
  4. Pour into four ramekins or glasses. Leave to cool to room temperature, then refrigerate for at least 4 hours (or overnight) until set with a gentle wobble.
  5. Just before serving, top with sliced or halved fresh strawberries.
