Ingredients
For 6 portions
- 600g pork belly (raw)
- 1,800ml tap water
- 1 medium onions
- 3 medium tomato
- 4 Tbsp tamarind
- 2 Tbsp fish sauce
- 200g daikon radish
- 200g aubergine
- 150g green beans
- 2 medium banana pepper
- 150g water spinach
- 320g white rice (dry)
Method
- Cut the pork belly into 3 cm pieces and put in a large pot with the water. Bring to the boil, skim off any foam, then add the quartered onion and tomatoes.
- Cover and simmer gently for 1 hour, until the pork is tender. Rinse and cook the rice in the last 20 minutes.
- Stir in the tamarind paste and fish sauce. Add the sliced daikon and simmer for 8 minutes.
- Add the aubergine, cut into thick slices, the green beans and the whole long peppers, and simmer for 6–7 minutes until tender.
- Taste. It should be properly sour and salty, so add more tamarind or fish sauce if needed.
- Turn off the heat, stir in the water spinach (kangkong) or ordinary spinach, and let it wilt. Serve straight away with the rice.
