Vegan Apple Cake

Ingredients

For 10 portions

Method

  1. Heat the oven to 180°C (160°C fan). Grease a 23 cm springform tin and line the base with baking paper.
  2. Peel and core the apples. Cut them into quarters and slice each quarter thinly, keeping the slices together. Toss gently with 15 ml of the lemon juice.
  3. Stir the rest of the lemon juice into the soy drink and leave for 5 minutes to thicken slightly.
  4. Beat the soft plant-based spread with 150 g of the sugar until pale and fluffy, then beat in the apple purée and vanilla.
  5. Mix the flour, baking powder, bicarbonate of soda and salt, and fold into the mixture with the soy drink until just combined.
  6. Spread the batter in the tin. Fan the apple quarters over the top, pressing them in lightly.
  7. Mix the rest of the sugar with the cinnamon and sprinkle it over the apples.
  8. Bake for 50 to 60 minutes, until golden and a skewer comes out clean from the cake. Cover loosely with foil if the top browns too quickly.
  9. Cool in the tin for 20 minutes before removing the sides, as this cake is delicate while hot. Serve warm or cold.
