Curry Goat

Ingredients

For 4 portions

Method

  1. Cut the goat into large chunks. Rub with half the curry powder, minced garlic, grated ginger, thyme, allspice and salt. Leave to marinate for at least 1 hour (overnight is better).
  2. Heat the oil in a heavy pot. Add the remaining curry powder and fry for 30–60 seconds until fragrant.
  3. Add the marinated goat and brown well on all sides.
  4. Add the chopped onion, the whole chilli and the water. Bring to a boil, then reduce to a gentle simmer. Cover and cook for 1½–2 hours until the meat is very tender.
  5. Add the diced potatoes and cook for a further 25–30 minutes until the potatoes are soft and the sauce has thickened.
  6. Taste and adjust seasoning. Serve hot.
