French Toast

Ingredients

For 2 portions

Method

  1. In a wide, shallow dish, whisk the eggs, milk, sugar, cinnamon, vanilla and salt until smooth.
  2. Lay the bread slices in the custard for about 20 seconds on each side, so they soak it up without falling apart. Day-old bread works best.
  3. Melt half the butter in a large frying pan over medium heat until it foams.
  4. Fry two slices for 2–3 minutes on each side, until deep golden and just set in the middle. Keep them warm in a low oven while you fry the rest in the remaining butter.
  5. Serve straight away, topped with the berries and a drizzle of maple syrup.
