Ingredients
For 2 portions
- 250g rice (dry)
- 200g kimchi
- 2 medium egg
- 2 medium spring onions
- 1 Tbsp gochujang
- 1 Tbsp soy sauce
- 1 Tsp sesame oil
- 1 Tbsp sunflower oil
Method
- Cook the rice in advance and leave it to cool (day-old rice is best).
- Heat the sunflower oil in a wok or large pan over high heat. Add the chopped kimchi and stir-fry for 2–3 minutes until it starts to caramelise.
- Add the cold rice, gochujang and soy sauce. Stir-fry for 3–4 minutes, breaking up any clumps, until the rice is hot and evenly coated.
- In a separate pan, fry the eggs sunny-side up.
- Divide the kimchi rice between bowls. Top each with a fried egg, a drizzle of sesame oil and sliced spring onions.
